I don't think I've ever posted a recipe but today I'm going to share this one. I found it off a food list here on the LJ somewhere. I just made it and it came out wonderful! And it's a really easy recipe to cut in half. Next time I make it I'm going to try subbing different veggies.

Hobbit Pie
Serves: 10
Cooking Time: 45 min

Ingredients
2 small onions, chopped
8 scallions, chopped
2 green peppers, chopped
1 pound mushrooms, sliced
2 cups cooked rice
1/2 cup grated Parmesan cheese
1 cup croutons
juice of 1 1/2 lemons
4 eggs, lightly beaten
1 1/2 cups milk
1/8 teaspoon dill
1/8 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon salt
1/4 teaspoon pepper

Topping:
1/2 pound sharp cheddar cheese, grated
3 tablespoons grated Parmesan cheese


Instructions
1.Saute onions, scallions, peppers, and mushrooms in vegetable oil.

2.Preheat oven to 350 degrees F.

3.Mix with rice, 1/2 cup of Parmesan cheese, croutons, and lemon juice.

4.Spread mixture in 9 x 13 inch baking pan. Mix eggs, milk and seasonings and pour over vegetables.

5.Bake at 350 degrees F for 45 min.

6.Top with 1/2 pound of grated cheddar cheese and 3 tablespoons of grated Parmesan cheese. Broil until bubbly.

1 24 count mini-muffin/snall tart pan [I only have one] + a quadruple batch of crean cheese/butter pastry = 130+ tart shells over 3&1/2 hours. That's just pushing raw pastry dough into the pan and baking one batch at a time, that's not counting the time it took to make all four batches and chill for 1+ hours.

Just shoot me now.

Next time? I'll shell out the $70 some for a case of the suckers or make the road trip to Canada and buy them.

This dinner Saturday better turn out.
